摘 要:花生的不同栽培方式可影响其加工品质,分析花生与不同果树套种的品质差异,有助于初步筛选适宜林果套种的加工专用花生品种。比较新疆不同果树套种模式下12个花生样品的脂肪、脂肪酸、蛋白质、蛋白亚基、特征氨基酸、蔗糖、维生素E、重金属、农残、塑化剂等指标差异,分析与不同果树套种对花生营养品质和安全品质的影响。结果表明,葡萄套种的花生脂肪、蔗糖、37.5kDa亚基、精氨酸和谷氨酸含量最高,分别为56.18g/100g、5.37g/100g、9.96%、4.13g/100g和7.28g/100g;红枣套种的花生23.5kDa亚基和维生素E含量最高,分别为19.65%和17.47mg/100g;杏树套种的花生O/L值和天门冬氨酸含量最高,分别为75.15和3.97g/100g;香梨套种的花生蛋白质含量最高,为25.74g/100g。该研究可为花生加工企业建立专用的高品质加工原料基地提供数据参考,也为后续新疆林果套种加工专用花生品种的选育和高产高效栽培技术的发展奠定基础。Different cultivation methods of peanut planting can affect its processing quality.By analyzing the quality difference of peanut kernel under interplanting with different types of fruit trees can contribute to preliminarily screen the processing-specific peanut varieties that are suitable for interplanting with fruit trees.Through comparing the differences of fat,fatty acid,protein,protein subunit,characteristic amino acids,sucrose,vitamin E,heavy metal,pesticide residue,plasticizer and other indexes of twelve peanut samples under different interplanting modes with fruit trees in Xinjiang,and analyzing the effects of different interplanting modes with fruit trees on the nutritional quality and safety quality of peanut,the results showed that the peanut interplanting with grape had the highest content of fat,sucrose,37.5 kDa subunit,arginine,and glutamic acid,which were 56.18 g/100 g,5.37 g/100 g,9.96%,4.13 g/100 g,and 7.28 g/100 g,respectively.Peanut interplanting with jujube had the highest content of 23.5 kDa subunit and vitamin E,which were 19.65%and 17.47 mg/100 g,respectively.The O/L value and aspartic acid content of peanut intercropping with apricot were the highest,which were 75.15 and 3.97 g/100 g,respectively.The protein content of peanut interplanting with balsam pear was the highest,which was 25.74 g/100 g.This study provided data reference for peanut processing enterprises to establish a specialized high-quality processing raw material base,and also laid the foundation for the subsequent selection and breeding of special peanut varieties for processing and the development of high-yield and high-efficiency cultivation technology in Xinjiang under interplanting with fruit trees.
