摘　　要：茶黄素(Theaflavins,TFs)是茶叶中的多酚类物质经发酵(酶促氧化)形成的一类水溶性色素,以苯骈卓酚酮环为母核,具有多个羟基或酚羟基结构,是红茶色素的主要成分,对茶汤色泽和口感具有重要作用。TFs具有调节血脂、抗氧化、抗炎抑菌、抗病毒等药理活性,在食品工业、生物医药、日化产品、生态保护及畜牧养殖等领域极具应用潜力。文章对TFs的理化特性、活性功效、应用现状进行了综述,并针对性提出了TFs应用中面临的问题及对策,以期为TFs功效的深入挖掘及跨界应用提供参考。Theaflavins(TFs),with the benzophenone rings as the mother core and a number of hydroxyl groups or phenolic hydroxyl compounds,are a kind of water-soluble pigments formed by the fermentation(enzymatic oxidation)of polyphenols in tea.As the main components of black tea pigments,they have a significant impact on the color and taste of tea soup.TFs have numerous pharmacological effects,such as regulating blood lipids,antioxidation,anti-inflammatory and bacteriostasis,antiviral,and anti-tumor,enabling them to have great application potential in the fields of food industry,biological medicine,daily chemical products,ecological protection and animal husbandry,etc.This research summarizes the physical and chemical properties,active efficacy,and application status of TFs,points out the problems and puts forward countermeasures in the application of TFs.It is expected to provide a reference for the in-depth exploration of TFs efficacy and cross-border development and application.
