摘 要:本文以胡椒精油为研究对象,基于超快速气相电子鼻及Feller加成模型对其特征香气进行分析,结果表明:胡椒精油主要由α-蒎烯、桧烯、β-蒎烯、3-蒈烯、D-柠檬烯、月桂烯、反式石竹烯等萜类及倍半萜类化合物构成,明确胡椒精油香气贡献度:3-蒈烯>月桂烯>D-柠檬烯>α-蒎烯>桧烯>β-蒎烯>反式石竹烯。利用Feller加成模型对关键呈香成分柠檬烯、α-蒎烯、β-蒎烯、月桂烯、3-蒈烯、反式石竹烯进行相互作用分析,除柠檬烯+α-蒎烯为加成作用,其余均为掩盖。利用超快速气相电子鼻及Feller加成模型对胡椒精油特征香气成分进行分析,明确呈香物质间的相互作用,为胡椒精油风味特征研究提供理论指导。Pepper essential oil was taken as the research object,and its characteristic aroma was analyzed based on the ultra-fast gas phase electronic nose and Feller addition model.The results showed that pepper essential oil was mainly composed ofα-pinene,sabinene,β-pinene,3-carene,D-limonene,myrcene,trans caryophyllene and other terpenoids and sesquiterpenes compounds.The components contribution to aroma of pepper essential oil was determined as follows:3-carene>myrcene>D-limonene>α-pinene>sabinene>β-pinene>trans caryophyllene.Using the Feller addition model,the interaction effect of key aroma components as limonene,α-pinene,β-pinene,myrcene,3-carene and trans caryophyllene was analyzed,and excluding limonene+α-pinene was an addition and the rest was masked.Therefore,the super-fast gas phase electronic nose and Feller addition model could be used to analyze the characteristic aroma components of pepper essential oil,to clarify the interaction between aroma producing substances.This study provides theoretical guidance for the study of pepper essential oilflavor characteristics.
