高校食堂固态餐厨废弃物的理化性质分析

摘  要:以湖北理工学院义诚食堂、腾龙食堂、静园食堂、枫园食堂和樱园食堂的餐厨固态废弃物为研究对象,对其进行了理化性质分析。结果发现,食堂餐厨废弃物中灰分含量为2.6%~8.8%左右、挥发分含量约为85%左右、总有机碳含量为38%~65.43%、总氮含量为9.41%~9.975%、总磷含量为0.02%~0.05%、蛋白质含量为16.77%~17.47%、脂肪含量为5.8%~23.6%。各食堂废弃物中油脂的pH值为6.6~6.9、酸值为0.12~0.16 mg KOH/g、碘值为97.29~101.52 g I/100 g、皂化值为140.53~143.34 mg KOH/g、过氧化值为1.02~1.59 meq/kg。本研究可为餐厨固态废弃物的资源化利用和规模化应用提供理论基础。The physical and chemical properties of kitchen solid waste from Yicheng Canteen,Tenglong Canteen,Jingyuan Canteen,Fengyuan Canteen and Cherry Garden Canteen of Hubei Polytechnic University were analyzed.It was found that the ash content of the cafeteria kitchen waste was about 2.6%to 8.8%,the volatile matter content was about 85%,the total organic carbon content was 38%to 65.43%,the total nitrogen content was 9.41%to 9.975%,the total phosphorus content was 0.02%to 0.05%,the protein content was 16.77%to 17.47%,and the fat content was 5.8%to 23.6%.The pH value of fats and oils in each cafeteria waste ranged from 6.6 to 6.9,the acid value from 0.12 to 0.16 mg KOH/g,the iodine value from 97.29 to 101.52 g I/100 g,the saponification value from 140.53 to 143.34 mg KOH/g,and the peroxide value from 1.02 to 1.59 meq/kg.This study can provide a theoretical basis for the resource utilization and large-scale application of kitchen solid waste.
