摘 要:目的:了解番薯淀粉中铝含量情况,分析其来源并研究降低铝含量的方法。方法:随机抽取28份番薯淀粉,采用石墨炉原子吸收法测定铝含量并进行分析;对番薯皮及淀粉自然沉降层的铝含量进行测定分析。结果:番薯淀粉铝含量为62.8~218.1 mg·kg^(-1),平均值117.4 mg·kg^(-1),简单清洗后的番薯皮铝含量为781.9 mg·kg^(-1),淀粉经自然沉降后铝含量降低了79.2%。结论:番薯淀粉中的铝主要来自加工时未清洗干净的番薯皮,番薯淀粉生产企业加工过程中可通过2次自然沉降来降低淀粉中铝的含量。Objective:To understand the aluminum content in sweet potato starch,analyze its sources and study the methods to reduce the aluminum content.Method:28 sweet potato starches were randomly selected,and the aluminum content was determined and analyzed by graphite furnace atomic absorption method;the aluminum content of sweet potato skin and the natural sedimentation layer of starch was determined and analyzed.Result:The aluminum content of sweet-1 potato starch ranged from 62.8 mg·kg to 218.1 mg·kg-1,with a mean value of 117.4 mg·kg-1.The aluminum content of sweet potato peel after simple washing was 781.9 mg·kg-1,and the aluminum content of starch was reduced by 79.2%after natural sedimentation.Conclusion:Aluminum in sweet potato starch mainly came from the sweet potato peel which was not cleaned during processing,and the sweet potato starch producers could reduce the aluminum content in starch by two times of natural sedimentation during processing.
