摘 要:为优化黄芪切片的微波真空干燥工艺,以干燥温度、切片厚度和真空度为影响因素,平均干燥速率、复水比、色差值为试验指标,利用响应曲面法研究各试验因素对黄芪切片微波真空干燥的影响,建立二次多项式回归模型并进行干燥工艺优化。结果表明:建立的回归模型显著,通过响应面分析得到最优参数为干燥温度40℃,切片厚度3 mm,真空度-0.06 MPa,此时对应试验指标为平均干燥速率0.645%/min、复水比7.35、色差值8.18。研究可为黄芪的产业化加工提供理论指导。In order to optimize the microwave vacuum drying process of Astragalus slices,the drying temperature,slice thickness and vacuum degree were taken as factors,and the average drying rate,rehydration ratio and color difference were taken as experimental indexes.The response surface method was used to study the effects of various experimental factors on microwave vacuum drying of Astragalus slices.A quadratic polynomial regression model was established and the drying process was optimized.Results showed:The established regression model is significant;the optimal parameters were obtained by response surface analysis:the optimal parameters were drying temperature 40°C,slice thickness 3 mm,vacuum degree-0.06 MPa,and the corresponding test indexes were:average drying rate 0.645%/min,rehydration ratio 7.35,color difference 8.18.The research can provide theoretical guidance for the industrial processing of Astragalus membranaceus.
