摘 要:本试验以生长性能、屠宰性能、肉品质、肌肉生化和抗氧化指标为评价指标,旨在研究80~120日龄淮北麻公鸡代谢能和粗蛋白质需要量。选取810只80日龄淮北麻公鸡,随机分成9个组,每组6个重复,每个重复15只。采用2因子3水平试验设计,设3个代谢能水平(12.56、12.77和12.98 MJ/kg)和3个粗蛋白质水平(15%、16%和17%),配制成9种试验饲粮。试验期为40 d。结果表明:1)代谢能水平为12.98 MJ/kg时平均日采食量(ADFI)显著高于其他各水平时(P<0.05);粗蛋白质水平为17%时平均日增重(ADG)显著高于其他各水平时(P<0.05),料重比(F/G)显著低于其他各水平时(P<0.05)。代谢能和粗蛋白质水平互作对ADFI有显著影响(P<0.05)。2)代谢能水平为12.98 MJ/kg时屠宰率、半净膛率、全净膛率显著高于其他各水平时(P<0.05),粗蛋白质水平为16%时屠宰率、半净膛率、全净膛率显著高于其他各水平时(P<0.05)。代谢能和粗蛋白质水平互作对屠宰率和全净膛率有显著影响(P<0.05)。3)代谢能水平为12.98 MJ/kg时胸肌的黄度(b)值显著低于其他各水平时(P<0.05),胸肌的蒸煮损失显著高于其他各水平时(P<0.05)。4)代谢能水平为12.77 MJ/kg时腿肌的胶着性和咀嚼性显著高于其他各水平时(P<0.05),粗蛋白质水平为16%和17%时腿肌的弹性和咀嚼性显著高于粗蛋白质水平为15%时(P<0.05)。5)代谢能水平为12.56 MJ/kg时腿肌和胸肌的乳酸(LD)含量显著低于其他各水平时(P<0.05),胸肌的过氧化氢酶(CAT)活性显著高于其他各水平时(P<0.05);粗蛋白质水平为15%时腿肌的丙二醛(MDA)含量显著低于其他各水平时(P<0.05),胸肌的谷胱甘肽过氧化物酶(GSH-Px)活性显著高于其他各水平时(P<0.05)。综合各项指标,以生长性能及肌肉生化和抗氧化指标作为评价指标,80~120日龄淮北麻公鸡的代谢能和粗蛋白质需要量分别为12.56 MJ/kg和15%;以屠宰性能作为评价指标,80~120日龄淮北麻公鸡的�The aim of this experiment was to investigate the effects metabolizable energy and crude protein requirements of Huaibei partridge chickens aged from 80 to 120 days according the evaluation indexes such as growth performance,slaughter performance,meat quality,muscle biochemical and antioxidant indexes.A total of 810 eighty-day-old Huaibei partridge chickens were selected and randomly divided into 9 groups with 6 replicates per group and 15 chickens per replicate.A 2-factor 3-level experimental design was used,and 3 metabolizable energy levels(12.56,12.77 and 12.98 MJ/kg)and 3 crude protein levels(15%,16%and 17%)were designed,formulated into 9 experimental diets.The experiment lasted for 40 days.The results showed as follows:1)the average daily feed intake(ADFI)at metabolic energy level of 12.98 MJ/kg was significantly higher than that at other levels(P<0.05);the average daily gain(ADG)at crude protein level of 17%was significantly higher than that at other levels(P<0.05),and the feed to gain ratio(F/G)was significantly lower than those at other levels(P<0.05).The metabolic energy and crude protein levels had significant interaction on the ADFI(P<0.05).2)The dressing percentage,semi-eviscerated percentage and eviscerated percentage at metabolic energy level of 12.98 MJ/kg were significantly higher than those at other levels(P<0.05),and the semi-eviscerated percentage and eviscerated percentage at crude protein level of 16%were significantly higher than those at other levels(P<0.05).The metabolic energy and crude protein levels had significant interaction on dressing percentage and eviscerated percentage(P<0.05).3)The breast muscle yellowness(b)value at metabolic energy level of 12.98 MJ/kg was significantly lower than that at other levels(P<0.05),and the breast muscle cooking loss was significantly higher than that at other levels(P<0.05).4)The hardness and gumminess of leg muscle at metabolic energy level of 12.77 MJ/kg were significantly higher than those at other levels(P<0.05),and the springiness and gumminess
