摘 要:茶褐素具有降脂减肥、抗氧化、抗疲劳等功效,是黑茶中一类重要的活性物质。由于其分子量大,结构复杂,使得研究难度较大。近年来,茶褐素提取分离技术和功能活性方面的研究取得一些进展。本论文综述了茶褐素的结构与性质、检测方法、提制技术,阐述了茶褐素的降脂减肥功能研究进展,并对茶褐素的研究方向和应用前景进行了展望。As an important active ingredient in dark tea,theabrownin has the effects of reducing fat,weight loss,anti-oxidation,anti-fatigue.Because of its large molecular weight and complex structure,research on it is difficult.In recent years,there has been some progress in the research on the extraction,separation technology and functional activity of theabrownin.In this paper,the structure,properties,detection method,extraction and preparation techniques of theabrownin were reviewed,the research progress of its lipid-lowering and weight loss function was elaborated,finally research direction and application prospects of theabrownin were provided.
