摘  要:建立食品可追溯供应链是解决食品安全问题的有效途径。由于传统的食品可追溯系统的运营成本高,导致一般企业不愿意参与。另外数据容易被篡改,以致消费者不愿接受转移到食品上的追溯系统应用成本造成的溢价。由此为提高追溯系统数据可靠度,需要在系统中融入天然具有不可篡改特点的区块链技术。文章从区块链技术与食品供应链可追溯系统的兼容性出发,理论分析出区块链技术的引入将降低食品供应链的交易成本、质量成本、时间成本、作业成本以及追溯的附加成本。通过对比区块链技术应用前后成本变化,探索基于区块链的食品供应链可追溯系统的成本控制机制,以促进食品供应链可追溯系统的发展。Establishing food traceable supply chain is an effective way to solve food safety problems.Due to the high operating cost of traditional food traceability system,it leads to the reluctance of general enterprises to participate.In addition,data can be easily tamper with,so that consumers are reluctant to accept the premium caused by the application cost of traceability systems transferred to food.Therefore,in order to improve the data reliability of the traceability system,it is necessary to integrate blockchain technology,which is naturally immutable,into the system.Based on the compatibility between blockchain technology and food supply chain traceability system,this paper theoretically analyzes that the introduction of blockchain technology will reduce the transaction cost,quality cost,time cost,operation cost and additional cost of food supply chain traceability.By comparing the cost changes before and after the application of blockchain technology,this paper explores the cost control mechanism of food supply chain traceability system based on blockchain,so as to promote the development of food supply chain traceability system.
