广西大果山楂无硫护色工艺的研究

摘  要:广西大果山楂是2000年经过潘中田教授栽培改良的本地特有山楂,种植于广西贺州、百色、桂林等地区,资源丰富。大果山楂在加工切片过程中容易发生褐变,造成农产品资源浪费。为了解决广西大果山楂果实在加工过程中的褐变问题,本研究以广西大果山楂果实为原料,△E值作为指标,并进行单因素试验对大果山楂果实切片护色的工艺,探讨抗坏血酸、CaCl_(2)、茶多酚、壳聚糖、NaCl 5种护色剂对护色效果的影响,选择护色效果较好的抗坏血酸、CaCl_(2)、NaCl作正交实验。按正交表L_(9)(3^(4))正交试验得到最佳工艺条件为:0.3%抗坏血酸+0.2%CaCl_(2)+0.5%NaCl;△E值为7.83,褐变变化量最小,效果最好。Guangxi Malus doumeri(Bois)Chev.,a local unique hawthorn cultivated and im‐proved by Professor Pan Zhongtian in 2000,was planted in Hezhou,Baise,Guilin and other areas in Guangxi in large quantities.M.doumeri was prone to brown during processing and slicing,resulting in waste of agricultural products.In order to solve the problem of browning during processing,this study took Guangxi M.doumeri as raw material,△E value as an index and conducted a single factor experiment on color protection technology of sliced hawthorn fruit in Guangxi and investigate the in‐fluence of 5 color protectants(ascorbic acid,CaCl_(2),tea polyphenol,chitosan and NaCl)on the color protection.Among the color protectants,scorbic acid,CaCl_(2) and NaCl with better color protection ef‐fect were selected for orthogonal experiment.Taking orthogonal experiment of orthogonal table L_(9)(3^(4))and the experiment result into account,the optimal process conditions are:0.3%ascorbic acid+0.2%CaCl_(2)+0.5%NaCl,△E=7.83,leading to the least browning and the best effect.
