摘 要:目的了解山东省茶叶中重金属元素含量及污染状况,为茶叶安全生产、保证卫生质量提供科学依据。方法2020-2021年在山东省6个地市采集280份红茶和绿茶样品,采用电感耦合等离子体质谱法(ICP-MS)测定茶叶中铅、镉、汞、砷的含量,根据《食品安全国家标准食品中污染物限量》(GB 2762-2017)和《茶叶中铬、镉、汞、砷及氟化物限量》(NY 659-2003)对检测结果进行判定。结果山东省茶叶中4种重金属均有不同程度的检出,其中铅、镉检出率均为100.0%,砷检出率为78.2%,汞检出率为31.8%。不同地区茶叶中铅元素、镉元素含量差异有统计学意义(P<0.05)。结论山东省茶叶重金属检出率相对较高,但其含量水平低于标准的限量要求,没有超标样品,总体卫生质量较好,但仍需持续关注并加强监测。Objective To know the content and contamination of heavy metal elements in tea in Shandong Province, and to provide scientific support for safety production and health quality assurance of teas. Methods A total of 280 samples of green tea and black tea were collected from 6 cities in Shandong Province from 2020 to 2021 to detect the contents of heavy metals including lead, cadmium, mercury, arsenic by inductively coupled plasma mass spectrometry. The test results were determined according to GB 2762-2017 National Food Safety Standard Limits of Contaminants in Food and NY 659-2003 Residue Limits for Chromium, Cadmium, Mercury, Arsenic and Fluoride in tea. Results Different levels of 4 heavy metals were detected in tea in Shandong Province, with a total detection rate of 77.5%. The detection rates of lead and cadmium were all 100.0%, and the detection rates of arsenic and mercury were 78.2% and 31.8%respectively. There were significant differences in the contents of Pb and Cd in different areas(P<0.05). Conclusion The detection rate of heavy metals in tea in Shandong Province is relatively high, but the contents level is far lower than the limit of the standard. There are no samples exceeding the standard, and the overall health quality is good. It is necessary to pay more attention and strengthen the monitoring.
