摘　　要：食用菌营养丰富,富含多糖、氨基酸、多肽等活性物质,其中多糖具有抗肿瘤、抗氧化、保湿、调节免疫等功效。通过总结食用菌多糖保湿功能的研究与应用现状,以期为食用菌多糖进一步开发应用提供参考依据。Edible fungi is rich in abundant nutritional material and contains active material such as polysaccharide,amino acid,polypeptide protein,which have the effect of anti-tumor,antioxidise,moisture retention and immune regulation.The application situation of moiture retetion of edible fungi polysacchrides were summarized,so as to provide references for further applied development of edible fungi polysaccharides.
