摘  要:为实现清香型酒醅理化指标的快速检测,结合清香型白酒酿造工艺同时运用近红外光谱技术,建立了入缸酒醅水分、淀粉和发酵酒醅水分、酸度、酒度、淀粉指标的快速检测模型。结果表明:通过使用不同光谱预处理方法和波数范围建立模型,使用内部交叉验证得到最优模型,各理化指标模型的相关系数(R^(2))值大于0.7线性良好,交叉验证均方根(RMSECV)小于1.15预测误差较小。使用盲样对各指标的模型进行外部验证,结果的相对标准偏差均在10%以内,符合生产检测的需求,可运用于酒醅的日常检测分析。In order to realize the rapid detection of physical and chemical indexes of Fen flavor fermented grains,combined with the brewing process of Fen flavor liquor,and using near infrared spectroscopy technology,a rapid detection model of moisture and starch in fermented grains and moisture,acidity,alcohol content and starch indexes of fermented grains was established.The results showed that:by using different spectral preprocessing methods and wave number range to establish the model,the optimal model was obtained by internal cross validation.The correlation coefficient(R^(2))value of each physical and chemical index model was greater than 0.7,and the linearity was good.The root mean square of cross validation(RMSECV)was less than 1.15,and the prediction error was small.The model of each index was externally verified by blind samples,and the relative standard deviations of the results were within 10%,which met the requirements of production detection,and could be applied to the daily detection and analysis of fermented grains.
