云南24个紫山药品系的营养保健功能成分分析

摘  要:对云南24个紫山药品系8个主要功能成分进行分析,研究云南紫山药的主要营养保健功能成分。结果表明,云南紫山药的淀粉、膳食纤维、蛋白质、粗多糖、花青素、尿囊素和多酚等营养保健功能成分含量较高,而薯蓣皂苷的含量较低。24个品系鲜样平均的淀粉含量为23.7%,膳食纤维含量为2.42%,蛋白质含量为2.56%,粗多糖含量为0.65%,花青素总量为161.8 mg/kg;干样平均的薯蓣皂苷含量为0.012 5%,尿囊素含量为0.75%,多酚含量为0.23%。花青素主要是矢车菊色素,其次是芍药素,还含有少量的天竺葵色素、飞燕草色素和锦葵色素,基本不含有矮牵牛色素。不同功能成分间的相关性不强,仅淀粉含量与粗多糖、薯蓣皂苷的含量间存在极显著正相关,膳食纤维与多酚的含量间存在显著正相关,蛋白质与尿囊素、多酚的含量间存在显著正相关。不同品系间的营养保健功能成分含量差异较大,在良种选育上有较大的潜力,通过对8个功能成分排序进行综合评价,较为优良的品系为YP3-3、LD13-1、JC1-1、LD25-6、MZ1-3、PE1、LD21-1、SXC3-2、YS5-3、YP7-1和YP7-5共11个。8 main functional components of 24 purple yam in Yunnan were analyzed,and the main nutritional and health functional components of purple yam in Yunnan were studied.The result showed that the content of starch,dietary fiber,protein,crude polysaccharide,anthocyanin,allantoin and polyphenols in Yunnan purple yam was high,while the diosgenin content was low.About this 24 purple yam,the average starch content was 23.7%,dietary fiber content was 2.42%,protein content was 2.56%,crude polysaccharide content was 0.65%,total anthocyanin content was 161.8 mg/kg,and dry samples of the content of diosgenin was 0.0125%,allantoin was 0.75%and polyphenols was 0.23%.Anthocyanins mainly include cornflower pigment,followed by paeoniflorin,and also contain a small amount of geranium pigment,delphinium pigment and mallow pigment,basically without petunia pigment.The correlation between different functional components was not obvious,only the starch content had a very significant positive correlation with the content of crude polysaccharide and diosgenin,the dietary fiber had a significant positive correlation with the polyphenols content,and the protein had a significant positive correlation with the content of allantoin and polyphenols.The content of nutrition and health care functional components among different types was quite different,which had great potential in breeding of improved varieties.Through comprehensive evaluation of 8 functional components,11 better types were YP3-3,LD13-1,JC1-1,LD25-6,MZ1-3,PE1,LD21-1,SXC3-2,YS5-3,YP7-1 and YP7-5.
