摘  要:抗生素耐药性问题一直是畜牧行业重点关注的问题,因此抗生素替代品的研发一直受到广泛关注。众多的研究表明,酵母培养物和活性干酵母有维持胃肠道环境、刺激天然免疫和获得性免疫、吸附真菌毒素、增强抗氧化能力和改善生产性能等多种生物学功能,在反刍动物生产中得到广泛应用。目前,关于酵母制剂调控反刍动物瘤胃功能的研究结果并不一致,而且作用机理也不明晰。因此,文章系统性地阐述了酵母培养物和活性干酵母的作用机理及其对瘤胃发酵和微生物区系等方面的影响,重点分析了它们对瘤胃环境、微生物区系和瘤胃营养代谢的调控作用,旨在为酵母制剂在反刍动物瘤胃功能调控上的深入研究提供参考,同时为酵母产品在畜牧业上的绿色安全应用提供一定的理论支撑。The problem of antibiotic resistance has always been a key concern of animal husbandry,so the research and development of antibiotic substitutes has been widely concerned.Numerous studies have shown that yeast culture and active dry yeast have various biological functions such as improving the gastrointestinal environment,stimulating innate and acquired immunity,adsorbing mycotoxins,and enhancing antioxidant capacity.These yeast products have been widely used in ruminant production.At present,the research results on yeast preparation regulating rumen function in ruminants are not consistent,and the mechanism of action is not clear.Therefore,this paper systematically summarized the action mechanism of yeast culture and active dry yeast,explored their effects on ruminal environment,microflora and rumen nutrition metabolism.The purpose of this study is to provide a reference for further research on the regulation of rumen function of yeast products in ruminants,and to provide a theoretical support for the green and safe application of yeast in animal husbandry.
