摘  要:打猪蹄冻,记忆犹深的是猪蹄的除毛工序。那个年代里,买来的猪蹄或猪皮上的毛很多都没有除净。要用镊子一根根拔除,没有个耐心还恐怕真不行。我看见老父亲戴着老花镜在仔细地清除猪蹄上的猪毛,真打猪蹄和猪皮冻中含有大量丰富的胶原蛋白,尤其对女士们有绝佳的美容作用,是天然的美肤食品,如今,打猪蹄或猪皮冻不再用大锅而改用高压锅。The process of removing hair from pig trotters is the most impressive in my memory of making pettitoe jelly.At that time,the hairs on the pig trotters or pork skin bought from the marketplace were usually not removed completely.People had to get rid of the remaining hairs one by one with tweezers,which requires great patience.Every time I saw my old father,with his reading glasses on,carefully removing the hairs from the pig trotters,I couldn't help admiring his patience from the bottom of my heart.
