摘　　要：香菇多糖(Lentinan,LNT)是香菇的主要活性成分之一,是典型的真菌β-葡聚糖,其单糖组成包括甘露糖、半乳糖和葡萄糖等,立体结构呈三螺旋,该结构使LNT具备免疫调节、抗氧化、促肠道健康、抗炎和抗肿瘤等多种生物活性,广泛应用于医学、食品、养殖等领域。LNT作为饲料添加剂已进入《饲料添加剂品种目录》。本文主要综述了LNT的生物活性及在鸡、猪生产中的应用研究进展,以期为LNT作为新型饲料添加剂应用于鸡、猪养殖提供思路和理论支撑。Lentinan is one of the main active ingredients extracted from Lentinula edodes.It is a typical fungalβ-glucan with a triple-helical stereo structure which gives LNT a variety of biological activities,including immunomodulation,antioxidant,intestinal health,anti-inflammatory and anti-tumour activities.LNT has been widely used in the fields of medicine,food and aquaculture,etc.LNT as a feed additive has been catalogued.In this paper,the biological activities of LNT and the progress of its application in chicken and pig production are reviewed,with a view to providing ideas and theoretical support for the application of LNT as a new type of feed additive in chicken and pig farming.
