摘 要:屠宰业发展至宋代呈现出较明显的专业化趋势。肉食品的生产、加工与销售逐渐分离,成为独立的行业。屠宰业结构产生较大变动,出现大量雇佣关系,牙人成为交易完成的重要见证人。宋代屠户群体内部收入差距逐渐扩大,但与其他行业相比,其收入水平并不算低。The development of the slaughtering industry till the Song Dynasty gradually showed a trend of specialization.The production,processing and selling of meat food were gradually divided and de⁃veloped into separate industries.The structure of slaughtering industry began to change greatly,and largescale employment emerged,with brokers ending up witnesses to the end-point meat trade.Though there was a gradually enlarged income gap between butchers in their industry,the income level of butchers is not low compared to those in other industries.
