基于气相色谱指纹图谱结合多成分定量的养生酒质量评价分析

摘　　要：以劲牌养生酒为研究对象,采用顶空固相微萃取结合气相色谱-质谱联用技术分析劲牌养生酒的挥发性物质,建立指纹图谱并进行相似度评价,进一步通过特征峰的相对浓度定量结果对该酒的质量稳定性进行评价。结果表明,在劲牌养生酒中共指认出22个特征峰,包括D-柠檬烯、辛酸乙酯、癸酸乙酯、己酸乙酯、可巴烯、Δ-杜松烯、α-依兰油烯、γ-松油烯等。通过建立该酒的指纹图谱结合多成分的定量分析方法可实现劲牌养生酒中间品质量稳定性评价及其他品类露酒的区分与鉴别,且评价结果与感官品评结果保持一致,具有快捷、稳定、准确度高等优点,为劲牌养生酒的质量控制提供了新方法。In this study,headspace-solid-phase microextraction combined with gas chromatography-mass spectrometry(GC-MS)was used to analyze the volatile components of Jingpai healthcare liqueur,then fingerprint profiles were established to evaluate the quality stability of Jingpai healthcare liqueur.The results showed that a total of 22 peaks were identified,including D-limonene,ethyl octanoate,ethyl decanoate,ethyl hexanoate,copaene,Δ-cadinene,α-muurolene,andγ-terpinene.Fingerprinting combined with multi-component quantification could be used to evaluate the quality stability of the intermediate products of Jingpai healthcare liqueur,as well as distinguishing Jingpai healthcare liqueur from other liqueur products.The evaluation results were consistent with the sensory evaluation results.The method established in this study is fast,stable and accurate,providing a new method for the quality control of Jingpai healthcare liqueur.
