摘　　要：以澳洲坚果为原料,通过超临界CO_(2)萃取制备澳洲坚果油。以澳洲坚果油得率和酸价为指标,在单因素试验的基础上通过正交试验优化萃取工艺,并对澳洲坚果油品质进行分析。结果表明:最优萃取条件为萃取温度35℃、萃取压力45 MPa、分离釜Ⅰ温度45℃、分离釜Ⅰ压力8 MPa、分离釜Ⅱ温度45℃、分离釜Ⅱ压力6 MPa。在此条件下,澳洲坚果油得率达51.33%,酸价为0.43 mg/g。产品品质分析表明,澳洲坚果油中油酸相对含量62.26%、棕榈油酸相对含量15.89%、角鲨烯含量(31.960±1.21)mg/g,表明超临界CO_(2)萃取的澳洲坚果油是高品质的木本油。Using macadamia nuts as raw materials,macadamia nut oil was prepared by supercritical CO_(2)extraction.Taking the yield and acid value of macadamia nut oil as the indicator,the extraction process was optimized by orthogonal experiment based on single factor experiments,and the quality of macadamia nut oil was analyzed.The results showed that the optimal extraction conditions were extraction temperature 35℃,extraction pressure 45 MPa,separation reactorⅠtemperature 45℃,separation reactorⅠpressure 8 MPa,separation reactorⅡtemperature 45℃,and separation reactorⅡpressure 6 MPa.Under the conditions,the yield of macadamia nut oil was 51.33%,and the acid value was 0.43 mg/g.Product quality analysis showed that the relative content of oleic acid in macadamia nut oil was 62.26%,palmitic acid was 15.89%,and squalene content was(31.960±1.21)mg/g,indicating that the macadamia nut oil extracted by supercritical CO_(2)was a high-quality woody oil.
