摘 要:通过对杂交鱼“花龙斑”及其亲本驼背鲈(Cromileptes altivelis♀)和鞍带石斑鱼(Epinephelus lanceolatus♂)的肌肉营养成分进行分析与品质评价,为石斑鱼的新品种选育、配合饲料研制提供基础数据资料。采用生化测定方法对3种石斑鱼肌肉中的水分、蛋白质、粗脂肪、灰分含量以及氨基酸、脂肪酸和8种矿物元素的组成与含量进行了测定和评价。结果表明,“花龙斑”粗蛋白质含量显著高于驼背鲈和鞍带石斑鱼(P <0.05);粗脂肪含量高于驼背鲈和鞍带石斑鱼,且与父本鞍带石斑鱼差异显著(P <0.05);“花龙斑”的蛋氨酸和甘氨酸含量均高于亲本,其甘氨酸含量与亲本差异显著(P <0.05)。“花龙斑”总氨基酸含量(18.42%)、必需氨基酸含量(7.00%)、非必需氨基酸含量(11.42%)、鲜味氨基酸含量(7.60%)均显著低于母本(P <0.05);除总氨基酸含量,“花龙斑”与父本差异不显著外(P> 0.05),其余均显著高于父本(P <0.05);必需氨基酸指数(EAAI)为驼背鲈(83.74)>鞍带石斑鱼(81.21)>“花龙斑”(75.21)且差异显著(P <0.05);DAA/TAA(0.41)要高于亲本;单不饱和脂肪酸(MUFA)含量为“花龙斑”(26.60%)>驼背鲈(26.51%)>鞍带石斑鱼(23.01%);“花龙斑”n-3多不饱和脂肪酸含量较亲本低,而n-6多不饱和脂肪酸含量高于亲本,n-3/n-6比值亦低于亲本。“花龙斑”的钾、镁和磷3种元素含量比较高,锌的含量显著低于亲本(P <0.05),钠元素的含量显著高于鞍带石斑鱼(P <0.05)。综上所述,杂交鱼“花龙斑”肌肉营养继承并综合了双亲的优良性状,肌肉营养成分较均衡,达到FAO/WHO标准,是符合人们营养需求的优质蛋白质源。Through analyzing and evaluating the muscle nutrient composition of the hybrid fish“Hualong Grouper”and its parent camelback grouper(Cromileptes altivelis♀)and giant grouper(Epinephelus lanceolatus♂),basic data and information are provided for the breeding of new varieties of groupers and the development of formulated feeds.The biochemical assay methods were used to determine and evaluate the water content,protein,crude fat,ash content,as well as the composition and content of amino acids,fatty acids,and eight mineral elements in the muscle of three species of groupers.The results showed that the crude protein content of“Hualong Grouper”was significantly higher than that of the Humpback Grouper and the Giant Grouper(P<0.05);the crude fat content was higher than that of the Humpback Grouper and the Giant Grouper,and significantly different from the parent Giant Grouper(P<0.05);the content of methionine and glycine in“Hualong Grouper”was higher than that of the parent species,and its glycine content was significantly different from the parent species(P<0.05).The total amino acid content(18.42%),essential amino acid content(7.00%),non-essential amino acid content(11.42%),and umami amino acid content(7.60%)of"Hualong Grouper"were significantly lower than those of the mother species(P<0.05);except for the total amino acid content,the other amino acid contents of"Hualong Grouper"were significantly higher than those of its father(P<0.05);the essential amino acid index(EAAI)was in the order of Humpback Grouper(83.74)>Giant Grouper(81.21)>"Hualong Grouper"(75.21),and the difference was significant(P<0.05);the DAA/TAA ratio(0.41)was higher than the parent species;the content of monounsaturated fatty acids(MUFA)was in the order of“Hualong Grouper”(26.60%)>Humpback Grouper(26.51%)>Giant Grouper(23.01%);the n-3 polyunsaturated fatty acid content of“Hualong Grouper”was lower than that of the parent species,while the n-6 polyunsaturated fatty acid content was higher than that of the parent species,and th
