摘  要:龙葵碱是一种糖苷生物碱,存在于茄科、百合科和菊科植物中,多见于马铃薯组织的幼嫩和损伤处,主要以α-茄碱和α-卡茄碱两种形式存在。龙葵碱对于植物抵御病虫害有着重要意义,但作为存在于马铃薯中的主要毒素,龙葵碱的含量关乎食品安全和人体健康,因此研究龙葵碱检测技术非常必要。本文对龙葵碱的来源、结构及理化性质、提取方法等进行了阐述,概括了龙葵碱检测技术的研究进展,以期为研究马铃薯及其制品的食用安全性提供参考。Solanine is a glycosidic alkaloid found in plants of the Solanaceae,Liliaceae and Compositae families.It is commonly found in tender and damaged parts of potato tissue and mainly exists in two forms:α-solanine andα-carnitine.Solanine is of great significance for plants to resist diseases and pests,but as the main toxin in edible potatoes,it is related to food safety and human physical health.Therefore,it is necessary to carry out research on solanine detection technology.In this article,the source,structure,physicochemical properties and extraction methods of solanine were elaborated,and the research progress in solanine detection technology was summarized,so as to provide reference for studying the edible safety of potatoes and their products.
