摘  要:桦褐孔菌(Inonotus obliquus)是一种名贵的药用真菌,含有多糖、多酚、三萜类、类固醇等多种生物活性成分。野生桦褐孔菌生长缓慢且稀少,较多研究结果表明,通过液态发酵所得桦褐孔菌与野生桦褐孔菌成分基本相似。本文综述了桦褐孔菌的发酵培养基优化,液态发酵条件,多糖、多酚物质、三萜类等生物活性物质的研究进展,为其液态发酵、发酵产物、生物活性的进一步研究及相关功能性产品的开发奠定基础。Inonotus obliquus is a valuable medicinal fungus,containing polysaccharides,polyphenols,triterpenoids,steroids and other bioactive components.Wild I.obliquus grow slowly and are scarce.Many studies have indicated that the composition of I.obliquus obtained by liquid fermentation is basically similar to that of wild I.obliquus.This paper reviews the optimization of fermentation medium,liquid fermentation conditions,and research progress on bioactive substances such as polysaccharides,polyphenols and triterpenoids in I.obliquus.It lays a foundation for the further study of liquid fermentation,fermentation products,biological activity and the development of related functional products.
