摘　　要：烟草香气是人体嗅觉器官对燃烧后烟叶气味的综合感受。烟草品质与其香气关系密切,直接影响烟草质量和可用性。烟叶中致香物质一般按照基团可分为醇类、醛类、酮类、酸类、酯类、酚类等。研究烟叶致香物质的性质、种类、检测技术等理论知识是生产香气浓郁且吃味醇和的高品质烟叶的重要基础。本文从烟叶致香物质的影响因子、分类、检测技术等方面进行了综述,旨在为深入研究烟草香味物质提供理论参考。The aroma of tobacco is the comprehensive perception of the smell of burned tobacco by the human olfactory organ.The quality of tobacco is closely related to its aroma,directly affecting its quality and usability.Tobacco aroma substances can generally be classified into alcohols,aldehydes,ketones,acids,esters,phenols,etc.based on groups.Studying the properties,types,and detection technology of tobacco aroma substances is an important foundation for producing high-quality tobacco with rich aroma and mellow taste.This paper reviewed of the influencing factors,classification,and detection technology of tobacco aroma substances,aiming to provide theoretical references for indepth research on tobacco aroma substances.
