摘　　要：研究一种补气养血党参鹿胶软糖的配方及制备工艺。采用经过熬制的鹿皮胶为原料,配以党参、黄芪、山楂、枸杞、甘草、陈皮、大枣和生姜等辅料制备一种富含多种营养物质的软糖。通过正交试验优选出最佳配方,经过烊化、煎煮、过滤、浓缩、溶解、过滤、定形、灭菌、包装即制成党参鹿胶软糖。制备的党参鹿胶软糖具有形态稳定均一、酸甜可口、颜色鲜亮、弹性适中、食用方便等特点。The formula and preparation technology of Codonopsis pilosula gum for replenishing Qi and nourishing blood were studied.In this paper,deerskin gum was used as raw material to prepare a kind of soft candy rich in nutrients,such as Codonopsis pilosula,Astragalus,Hawthorn,Chinese wolfberry,licorice,tangerine peel,jujube and ginger.The best formula was selected by orthogonal test,and Codonopsis pilosula gum fudge was made by curing,decocting,filtering,concentrating,dissolving,filtering,shaping,sterilizing and packaging.The obtained Codonopsis pilosula gum fudge has the characteristics of stable and uniform shape,sweet and sour taste,bright color,moderate elasticity,convenient consumption and so on.
