摘  要:以葡萄酒残渣(GWR)为研究对象,测定了其活性成分的含量信息由高到低依次为:糖类、多酚、黄酮、蛋白质。用GWR实现了金纳米颗粒(GNPs)的绿色制备,通过紫外-可见分光光度计、傅里叶红外光谱、透射电子显微镜等技术手段对GNPs的结构形态进行表征。分析得到GWR中酚类或多羟基类物质作为还原剂存在,而起保护作用的主要为多酚和黄酮类物质,GNPs结构为面心立方晶体。通过控制变量探究了GNPs的合成规律,发现酸碱度和反应温度是影响GNPs形貌的主要因素,而提取液浓度与反应容器是影响GNPs粒径的主要因素。Taking grape wine residue(GWR)as the research object,the content information of its active components was determined in the order from high to low:sugars,polyphenols,flavonoids and proteins.The green preparation of gold nanoparticles(GNPs)was realized by GWR.The structure and morphology of GNPs were characterized by UV-Vis spectrophotometer,Fourier infrared spectrum,and transmission electron microscope.The analysis showed that phenols or polyhydroxy substances in GWR existed as reducing agents,and the main protective substances were polyphenols and flavonoids.The structure of GNPs was a face-centered cubic crystal.The synthesis law of GNPs was explored by controlling variables,and it was found that pH and reaction temperature were the main factors affecting the morphology of GNPs,while the concentration of extraction solution and reaction vessel were the main factors affecting the particle size of GNPs.
