摘  要:在经历良渚文化的高峰之后,先秦时期的浙江饮食文化一度陷入停滞,直到商周以后开始逐渐发展起来。越国建立之后,於越先民在适应、改造自然环境的过程中,大力发展农业、畜牧业、渔业、制盐业,形成了以稻米为主食,贝类、蛤蜊、鱼蟹等水产品,猪、狗、牛、鸡等禽畜,以及各类果蔬为主要副食的饮食结构,饮酒之风盛行,烹调技艺完备,创制出的原始瓷烧制技术开创了瓷质饮食器具的先河,对中国饮食文化产生了深刻影响。饮食思想上接受了中原食礼制度的熏陶。先秦时期浙江饮食文化的发展既体现了自身的区域特点,又表现出与外来文化相融合的一面,为中华民族饮食文化的多样性做出了重要贡献,也为现在浙江饮食文化的发展奠定了基础。Following the zenith of Liangzhu culture in Zhejiang,the province's food culture experienced a period of stagnation until the Shang and Zhou dynasties.After the founding of the State of Yue,the ancestors of Yue developed agriculture,animal husbandry,fishery,and salt production in order to adapt to and transform the natural environment.A dietary structure was formed with rice as the staple food,supplemented by aquatic products such as shellfish,clams,fish,and crabs,as well as livestock including pigs,dogs,cattle,and chickens,along with various fruits and vegetables.The culture of drinking wine prevailed,accompanied by remarkable improvement in culinary skills.Their pioneering techniques in primitive porcelain firing laid the foundation for ceramic tableware,profoundly shaping Chinese culinary culture.Additionally,they adopted the dietary etiquette system from the Central Plains.The development of Zhejiang's food culture in the pre-Qin period reflects both its regional characteristics and its integration with foreign cultures.They made significant contributions to the diversity of Chinese culinary culture,laying the groundwork for the development of modern Zhejiang culinary culture.
