摘 要:明代为了保障西部边关的供应,采取了“食盐开中”“棉布征实”“茶叶开中”等一系列政策,陕西商人因地理之便一跃而起,成为驰骋江淮的巨商富贾,三原、泾阳一带也成为新兴的经贸重镇。明末以来社会奢靡成风,陕西商人从江南把这种奢侈风气带回关中,客观上促进了关中饮食行业的发展和繁荣。明清是各大菜系成型的黄金时期,关中中心城市内在驱动力不足,陕商喜好消费不兴产置业的习俗等诸多因素,导致陕西饮食文化失去了再度复兴的难得机遇,值得深思。In the Ming Dynasty,in order to ensure the supply of troops on the western border,a series of measures were taken,such as“salt kaizhong”,“cotton levy”and“tea kaizhong”,Shaanxi merchants sprang up because of the geographical advantage,and became the huge merchants and wealthy merchants who rode on the Jianghuai,and the area of Sanyuan and Jingyang also became the emerging economic and trade towns.Since the end of the Ming Dynasty,social extravagance had become a trend,Shaanxi merchants from Jiangnan brought this luxury back to Guanzhong,objectively promoting the development and prosperity of the catering trade in Guanzhong.The Ming and Qing Dynasties were the golden period of the formation of major cuisine,the central city of Guanzhong lacked intrinsic motivation,and the Shaanxi merchants preferred to consume but were unwilling to invest in industry,and many other factors,resulting in Shaanxi diet culture lost a rare opportunity to revive.It is worth thinking about.
