摘　　要：动物肉用性能包括动物肉质性状和胴体性状。传统的人工表型鉴定方式效率低、准确性差;新的鉴定技术包括近红外光谱技术、 B型超声波技术、机器视觉技术、代谢组学技术等,有效提高了检测效率。同时,这些新的鉴定技术可以应用于多种肉质性状和胴体性状的鉴定。该文综述了动物肉质性状和胴体性状传统及新兴鉴定技术,重点介绍了近十年肉用性能鉴定技术的发展现状并进行展望,以期为后续相关研究提供参考。Animal meat performance includes meat traits and carcass traits.The traditional artificial phenotype identification method has low efficiency and poor accuracy;the new identification technology includes near infrared spectrum technology,B type ultrasonic technology,machine vision technology,metabolomics technology,which effectively improve the detection efficiency.Meanwhile,these new identification techniques can be applied to the identification of multiple meat quality and carcass traits.This paper summarizes the traditional and emerging identification techniques for animal meat quality and carcass traits,and highlights the development status of meat performance identification techniques in the past decade,in order to provide reference for future studies.
