摘 要:试验旨在研究延长不同品种鸡产蛋周期对其淘汰鸡的屠宰性能、肉品质和肌肉主要营养成分含量的影响。试验选取52、72和100周龄的北京油鸡和白来航鸡母鸡,比较不同品种不同淘汰周龄各指标的差异。结果显示:延长产蛋周期对两品种体重无显著影响(P>0.05)。100周龄北京油鸡半净膛重与52周龄无显著差异(P>0.05),但显著高于72周龄(P<0.05),全净膛重显著高于52和72周龄(P<0.05)。100周龄白来航鸡腹脂重和腹脂率显著低于72周龄(P<0.05),北京油鸡也有类似趋势。此外,北京油鸡胸肌滴水损失和蒸煮损失分别为3.10%~4.77%和13.50%~18.90%,均高于白来航鸡(P>0.05)。胸肌主要营养成分水分、粗蛋白质、总饱和脂肪酸和总不饱和脂肪酸等在品种间和周龄间均无显著差异(P>0.05)。研究表明,延长产蛋周期对北京油鸡和白来航鸡的体重和主要营养成分没有显著影响,但显著降低高产蛋鸡的腹脂重和腹脂率,改善胴体组成。This experiment was aimed to study the effect of extending laying cycle on carcass performance,meat quality and main nutrient content of muscle for different breeds of spent hens.Beijing-You chickens and White Leghorn at 52,72 and 100 weeks of age were selected to compare the differences of above indexes in those two breeds at different eliminated ages.The results showed that extending laying cycle had no significant effect on body weight of two breeds(P>0.05).Half eviscerated weight of Bei-jing-You chickens at 100 weeks of age had no significant difference with that at 52 weeks of age(P>0.05),but was higher than that at 72 weeks of age(P<0.05).The eviscerated weight of Beijing-You chickens at 100 weeks of age was higher than those at 52 weeks of age and 72 weeks of age(P<0.05).Abdominal fat weight and yield of White Leghorn at 100 weeks of age were lower than those at 72 weeks of age,and these indexes of Beijing-You chicken showed the same trend.Moreover,the drip loss and cook loss of Beijing-You chickens were 3.10%to 4.77%and 13.50%to 18.90%respectively,which were higher than those of White Leghorn(P>0.05).The main nutrients of breast muscle,including moisture,crude protein,saturated fatty acid,unsaturated fatty acid and etc.,had no significant differences between breeds or ages(P>0.05).Given all that,extending laying cycle had no significant effects on body weight or main nutrient content for Beijing-You and White Leghorn chickens.Whereas,extending laying cycle significantly reduced abdominal fat weight and yield of high-productive layers to improve the carcass composition.
