酸枣针叶樱桃复合果汁饮料配方及功能性研究

摘　　要：采用正交试验和稳定剂优化试验确定复合果汁饮料的配方比例和稳定剂用量;建立小鼠氧化损伤模型和免疫低下模型,通过试验探讨复合果汁饮料的增强免疫和抗氧化作用。正交试验结果表明,复合果汁饮料最佳配方为:酸枣浓缩汁10%,针叶樱桃浓缩汁2.4%,结晶果糖5%,三氯蔗糖0.006%,稳定剂用量为羧甲基纤维素钠0.225%与黄原胶0.075%;动物试验结果表明,各剂量组可显著升高耳肿胀差值;中、高剂量可显著调节由环磷酰胺引起的脏器指数变化,缓解药物建模对小鼠免疫能力的影响;中、高剂量可显著降低MDA、H_(2)O_(2)含量,减低酒精建模对小鼠机体氧化损伤的作用。通过研究,获得风味浓郁、外观色泽怡人的复合果汁饮料;并验证其对小鼠具有增强免疫及抗氧化作用。Orthogonal test and stabilizer optimization test were used to determine the formula proportion and stabilizer dosage of complex fruit juice beverage.The oxidative damage model and immune hypothermia model of mice were established,and the immune enhancement and antioxidant effects of complex fruit juice drinks were investigated through experiments.The orthogonal test results showed that the optimal formula of the complex juice beverage was as follows:jujube juice concentrate 10%,coniferous cherry juice concentrate 2.4%,crystalline fructose 5%,sucralose 0.006%,the stabilizer dosage was carboxymethyl cellulose sodium 0.225%and xanthan gum 0.075%.The animal test results showed that each dose group could significantly increase the difference of ear swelling.Medium and high doses can significantly regulate the changes of organ index caused by cyclophosphamide,and alleviate the effects of drug modeling on the immune ability of mice.The content of MDA and H_(2)O_(2) can be significantly decreased at medium and high doses,and the effect of alcohol modeling on oxidative damage of mice can be reduced.Through research,the compound fruit juice beverage with rich flavor and pleasant appearance was obtained.It was also verified that it had enhanced immunity and antioxidant effects on mice.
