摘 要:以藏红花和决明子为主要原料,开发了一款具有利胆功效的养生茶。通过大鼠利胆实验发现决明子可显著增加胆汁酸和总胆红素含量,藏红花可显著提高胆汁分泌量同时降低胆固醇含量,确定主料的最优用量为决明子4.0 g和藏红花0.05 g。进一步使用红枣、枸杞和胎菊优化了茶包的风味品质,发现添加红枣2.0 g、枸杞2.2 g、胎菊0.2 g时,产品香气清雅,口感酸甜适口,茶包风味品质最优。通过动物实验验证了饮用茶包可使胆汁分泌增加,改善胆汁成分代谢水平,具有明显的利胆效果。研究结果为开发具有利胆功效的健康食品提供了依据和参考。A healthy tea with choleretic effects was developed using saffron and cassia seed as the main ingredients.Through choleretic experiments on rats,it was found that cassia seed significantly increased the levels of bile acids and total bilirubin,while saffron notably enhanced bile secretion while reducing cholesterol levels.The optimal dosage of the main ingredients was determined to be 4.0 g of cassia seed and 0.05 g of saffron.Furthermore,the flavor quality of the tea bags was optimized by adding red dates,goji berries,and chrysanthemum buds.It was observed that the addition of 2.0 g of red dates,2.2 g of goji berries,and 0.2 g of chrysanthemum buds resulted in a tea with a delicate aroma and a sweet-sour taste,indicating the best flavor quality of the tea bags.Animal experiments confirmed that drinking the tea increased bile secretion,improved the metabolic levels of bile constituents,and exhibited significant choleretic effects.This study provides a basis and reference for the development of health foods with choleretic effects.
