摘 要:为了解食品基质中氨基酸对亚油酸乙酯高温裂解形成气相醛类物质的影响,采用在线裂解-剑桥滤片过滤-气相/质谱技术,分别考察了亚油酸乙酯单独裂解以及与不同比例的L-脯氨酸、L-谷氨酸共裂解时生成的气相成分,对比分析其中醛类物质的变化,发现:亚油酸乙酯单独裂解产生大量的气相化合物,其中醛类物质峰面积占气相化合物的29.058%(己醛占比8.271%、(Z)-2-庚烯醛占比5.455%、戊醛占比2.472%、(E,E)-2,4-癸二烯醛占比2.064%、(E)-2-辛烯醛占比1.825%、庚醛占比0.969%、4-氧壬醛占比0.852%、2,4-十二碳二烯醛占比0.458%、2-己烯醛占比0.396%以及(E,E)-2,4-壬二烯醛占比0.098%);当L-脯氨酸和亚油酸乙酯以0.5 mg∶1μL的比例共裂解时,气相成分中检测不到醛类物质;而以0.125 mg∶1μL的比例共裂解时,裂解产物中可检测到(Z)-2-庚烯醛(峰面积为亚油酸乙酯单独裂解时的6.862%);当L-谷氨酸和亚油酸乙酯以0.5 mg∶1μL和0.125 mg∶1μL的比例共裂解时,裂解产物中可检测到己醛和(Z)-2-庚烯醛。因此,在线裂解-剑桥滤片过滤-气相/质谱技术可以高效地分析亚油酸乙酯裂解过程中形成的气相醛类物质,当L-脯氨酸或L-谷氨酸以不同的比例与亚油酸乙酯共裂解时,对气相醛类物质的形成具有非常明显的影响,影响程度与氨基酸种类和添加比例有关。To understand the formation of gaseous aldehydes from pyrolysis of ethyl linoleate and the influence of amino acids in food matrix on the formation of these aldehydes,the technology of online pyrolysis-Cambridge pad filter-gas chromatography/mass spectrometry(Py-Cambridge Pad Filter-GC/MS)was utilized to investigate the gaseous compounds generated from the pyrolysis of ethyl linoleate alone and its co-pyrolysis with different ratios of L-proline or L-glutamic acid,and the changes in aldehydes were compared and analyzed.The results showed that:The pyrolysis of ethyl linoleate alone produced a large number of gaseous compounds,with aldehydes accounting for approximately 29.058%(hexanal 8.271%,(Z)-2-heptanenal 5.455%,pentanal 2.472%,(E,E)-2,4-decadienal 2.064%,(E)-2-octenal 1.825%,heptanal 0.969%,4-oxononanal 0.852%,2,4-dodecadienal 0.458%,2-hexenal 0.396%,and(E,E)-2,4-nonadienal 0.098%).When L-proline was co-pyrolyzed with ethyl linoleate at a ratio of 0.5 mg∶1μL,no aldehydes were detected in the gaseous components,however,at a ratio of 0.125 mg∶1μL,(Z)-2-heptanenal was detected(6.862%of that from ethyl linoleate pyrolyzed alone)could be detected in the gaseous components.When L-glutamic acid and ethyl linoleate were co-pyrolyzed at ratios of 0.5 mg∶1μL and 0.125 mg∶1μL,hexanal and(Z)-2-heptanenal were detected in the pyrolyzed products.Therefore,the online Py-Cambridge Pad Filter-GC/MS technique could efficiently analyze the gaseous aldehydes formed during the pyrolysis of ethyl linoleate.The formation of gaseous aldehydes is significantly influenced by the type and ratio of amino acids when co-pyrolzed with ethyl linoleate.
