摘 要:肌内脂肪含量与肉的系水力、嫩度和风味等指标密切相关,是影响肉质的关键因素之一。近年来随着基因测序技术的不断更新发展,调控肌内脂肪沉积的基因被不断挖掘,但其发挥作用的分子机制还需要进一步完善。因此文章主要从影响肌内脂肪沉积的非编码RNA和候选基因两方面进行综述,以期为畜牧生产中提高肌内脂肪的沉积提供一定借鉴和参考。The intramuscular fat content was closely related to the water content,tenderness,and flavor of meat,and was one of the key factors affecting meat quality.In recent years,with the continuous up-date and development of gene sequencing technology,genes regulating intramuscular fat deposition have been continuously explored,but the molecular mechanisms by which they play a role still need to be fur-ther improved.Therefore,this article mainly reviews the non-coding RNA and candidate genes that af-fect intramuscular fat deposition,in order to provide some reference for improving intramuscular fat depo-sition in livestock production.
