摘 要:目的:对干银耳中二氧化硫含量的测定过程进行不确定度评定。方法:依据《食品安全国家标准食品中二氧化硫的测定》(GB 5009.34—2022)第一法酸碱滴定法,对干银耳进行二氧化硫含量的测定;参照《测量不确定度评定与表示》(JJF 1059.1—2012)的要求,建立不确定度评定的数学模型,分析各实验环节的不确定度分量,根据来源的不同分类,进行各类不确定度的评定和合成。结果:干银耳中的二氧化硫含量为186 mg·kg^(-1),扩展不确定度为5 mg·kg^(-1)(k=2)。结论:通过对干银耳中二氧化硫含量测定过程进行不确定度评定,发现银耳中二氧化硫测试结果的不确定度主要来源于样品的均匀性和标准溶液,可为后续提升酸碱滴定法测定银耳中二氧化硫的准确度和可靠性提供参考。Objective:To evaluate the uncertainty of the determination process of sulfur dioxide content in dried Tremella fuciformis.Method:The sulfur dioxide content of dried Tremella fuciformis was determined according to the acid-base titration method of GB 5009.34—2022.According to the requirements of JJF 1059.1—2012,the mathematical model of uncertainty evaluation is established,the uncertainty components of each experimental link are analyzed,and all kinds of uncertainties are evaluated and synthesized according to different classification sources.Result:The sulfur dioxide content in dried Tremella fuciformis was 186 mg·kg^(-1) and the extended uncertainty was 5 mg·kg^(-1)(k=2).Conclusion:By evaluating the uncertainty of sulfur dioxide in dried Tremella fuciformis,it is found that the uncertainty of sulfur dioxide in Tremella fuciformis mainly comes from the uniformity of the sample and the standard solution,which provides a reference for the subsequent improvement of the accuracy and reliability of sulfur dioxide in Tremella fuciformis by acid-base titration.
