新旧国标下羊乳基婴幼儿配方奶粉脂质组分的比较研究

摘　　要：比较新旧国标下羊乳基婴幼儿配方奶粉脂质特点及其差异,并与中国母乳脂质进行相似度评价。采用高效液相色谱串联质谱和高效液相色谱分别检测婴幼儿配方奶粉中甘油三酯、磷脂和胆固醇的组成和含量,基于多变量分析(PLs-DA)和热图聚类分析新旧国标羊乳基婴配奶粉差异脂质;采用马氏距离评价新旧国标羊乳基婴配奶粉脂质与母乳的相似度。结果表明,在甘油三酯方面,新旧国标羊乳基配方奶粉的差异主要在于中长链甘油三酯(Medium and long-chain triacylglycerol,MLCT)组成与含量上,如TG(10∶0/16∶0/14∶1)(Ca/P/Ma)、TG(12∶0/16∶1/18∶1)(La/Pa/O)、TG(8∶0/10∶0/14∶1)(Cy/Ca/Ma)等MLCT在新国标羊乳基婴配奶粉中检出,而在旧国标羊乳基婴配奶粉中未检出。在磷脂方面,新国标下羊乳基婴配奶粉磷脂含量整体上高于旧国标下羊乳基婴配奶粉,其中,新国标IFA(婴儿配方奶粉A)系列高于IFB(婴儿配方奶粉B)系列。羊乳基婴配奶粉胆固醇含量为7.16~29.0 mg/100 g奶粉,其中IFA>IFb>IFB,新国标IFA系列约为IFB系列的2~4倍;而旧国标IFb 3段是新国标IFB 3段的3倍。与母乳脂质进行相似度评价,新国标IFB 1段配方奶粉最接近母乳,配方奶粉得分为IFB>IFA>IFb>88分。To compare the characteristics and differences of lipids in goat milk-based infant formula under the new and old national standards,and to evaluate the similarity with Chinese human milk lipids.the composition and content of triglyceride,phospholipid and cholesterol in infant formula were determined by high performance liquid chromatography-tandem mass spectrometry and high performance liquid chromatography,the difference of lipids between new and old national standard goat milk-based infant milk powder was analyzed based on multivariate analysis(PLs-DA)and heatmap cluster analysis,and the similarity between new and old national standards goat milk-based infant milk powder lipid and human milk was evaluated by Mahalanobis distance.Results:in terms of triglycerides,the difference between the new and old national standards goat milk-based formula mainly lies in the composition and content of medium and long-chain triacylglycerol(MLCT),such as TG(10∶0/16∶0/14∶1)(Ca/P/Ma),TG(12∶0/16∶1/18∶1)(La/Pa/O),TG(8∶0/10∶0/14∶1)(Cy/Ca/Ma)and other MLCT were detected in the new national standard goat's milk-based infant formula,but not in the old national standard goat's milk-based infant formula.Thus it can be seen that the composition of triglyceride in goat milk-based infant milk powder under the new national standard is more abundant than that in the old national standard.In the aspect of phospholipids,the phospholipid content of goat milk-based infant formula under the new national standard was higher than that of the old national standard,and the phospholipid content of the new national standard IFA(infant formula A)series was higher than that of the IFB(infant formula B)series.The cholesterol content of goat milk-based infant milk powder is 7.16-29.0 mg/100g milk powder,in which IFA>IFb>IFB,and the cholesterol content of the new national standard IFA series is much higher than that of the IFB series,about 2-4 times,while the old national standard IFb 3 section is three times that of the new national stand
