中华各民族交流交往交融视域下的宋代乳酪饮食文化研究

摘　　要：宋代的乳酪文化根植于南北方文化大交流的历史时期,作为一个同辽、金、西夏对峙下的中原王朝,本没有肥沃的牧场提供制作乳酪的奶源,更没有浓厚的乳酪饮食文化传承,却在两宋时期,从平民大众到皇家贵族,从街头巷尾的乳酪店到皇家乳酪院,蓬勃发展出规模庞大、工艺高超的乳酪饮食文化。从中国的乳酪历史沿革、宋代民族交往视域下的乳酪文化发展、宋代市井乳酪文化以及宋代皇家乳酪文化四个方面展开论述,解读分析历史脉络中的宋代乳酪饮食文化的形成与发展路径。The cheese culture of the Song Dynasties was rooted in the historical period of cultural exchanges between the South and the North.As a Central Plains dynasty against the Liao,Jin and Western Xia Dynasties,there was no fertile pasture to provide milk source for making cheese,let alone a strong heritage of cheese diet.However,during the Song Dynasties,from the common people to the royal nobility,from the cheese shops on the streets to the royal cheese workshop,there developed a large scale and highly skilled cheese food culture.This paper discusses the historical evolution of cheese in China,the development of cheese culture from the perspective of ethnic communication in Song Dynasties,the urban cheese culture and the royal cheese culture in the Song Dynasties,and analyses the formation and development path of cheese food culture in the Song Dynasties in the historical context.
