摘  要:为了研究不同日龄阉割对河田鸡胸肌氨基酸含量的影响,试验选取40日龄河田鸡公鸡400羽,随机分为4组,每组4个重复,每个重复25羽,对照组公鸡不阉割,试验Ⅰ组、试验Ⅱ组和试验Ⅲ组公鸡分别于40,60,80日龄实施手术阉割。对照组、试验组公鸡全程饲喂相同日粮,饲养至170日龄。分别于140,170日龄从每个重复随机取3羽测定胸肌蛋白质和氨基酸含量。结果表明:试验Ⅰ~Ⅲ组140,170日龄胸肌蛋白质、鲜味氨基酸含量与对照组差异不显著(P>0.05)。140日龄时,试验Ⅰ~Ⅲ组胸肌谷氨酸和组氨酸含量显著高于对照组(P<0.05),蛋氨酸、酪氨酸及脯氨酸含量显著低于对照组(P<0.05);试验Ⅲ组胸肌异亮氨酸、亮氨酸、赖氨酸、精氨酸、总氨基酸、必需氨基酸含量均显著低于对照组、试验Ⅰ组和试验Ⅱ组(P<0.05)。170日龄时,试验Ⅰ~Ⅲ组胸肌胱氨酸含量显著高于对照组(P<0.05),丝氨酸、苯丙氨酸含量显著低于对照组(P<0.05);试验Ⅱ组胸肌天冬氨酸和缬氨酸含量显著高于对照组、试验Ⅰ组和试验Ⅲ组(P<0.05)。说明阉割对河田鸡胸肌蛋白质、鲜味氨基酸含量无显著影响,对不同日龄河田鸡胸肌氨基酸含量的影响存在差异。In order to investigate the effects of caponization at different ages on amino acids content in breast muscle of Hetian chickens,400 forty-day-old Hetian chicken cockerels were randomly assigned to 4 groups with 4 replicates per group and 25 birds per replicate.The roosters in the control group were not castrated,and the roosters in experimental groups I,II,and II were castrated at ages 40,60,and 80 days,respectively.All birds were fed the same basal diets until 170 days of age.Three birds per replicate were sacrificed for protein and amino acids test of breast muscle at 140 and 170 days of age,respectively.The results showed that there were no significant differences in protein and flavor amino acids(FAA)in breast muscle between experimental groupsⅠtoⅡand the control group at 140 and 170 days of age(P>0.05).At 140 days of age,the contents of glutamic acid and histidine in breast muscle in the experimental groupⅠ,ⅡandⅢwere significantly higher than those in the control group(P<0.05),while the contents of methionine,tyrosine and proline were significantly lower than those in the control group(P<0.05).The contents of isoleucine,leucine,lysine,arginine,total amino acid and essential amino acid in the breast muscle in the experimental groupⅡwere significantly lower than those in the control group,experimental groupⅠand experimental groupⅠ(P<0.05).At 170 days of age,the content of cystine in the breast muscle in the experimental groupsⅠtoⅡwas significantly higher than that in the control group(P<0.05),but the contents of serine and phenylalanine were significantly lower than those in the control group(P<0.05).The contents of aspartic acid and valine in the breast muscle in the experimental groupⅡwere significantly higher than those in the control group,experimental groupⅠand experimental groupⅡ(P<0.05).The results indicated that castration had no significant effects on the content of protein and FAA in the breast muscle of Hetian chickens;the influence of castration on amino acids content in
