摘  要:为探讨烟叶在热加工过程中的结构变化规律,基于ATR-FTIR光谱技术对烟叶加热过程进行原位监测,借助外扰相关移动窗口等分析手段,重点研究了温度对烟叶结构和成分的影响机制。结果表明:①烟叶在热处理过程中发生的物理、化学变化主要包括吸附水分子的脱除、小分子有机酸的挥发、烟叶中氢键结构的解离、小分子有机物的熔融以及羟基的氧化等。②O—H和C—H键光谱强度变化的转变点为154℃,转变区间为148~162℃;C=O键光谱强度变化的转变点为156℃,转变区间为150~162℃。表明烟叶在该温度区间发生了剧烈的物理或化学变化,如氧化、小分子脱除等。In order to investigate the structural changes of tobacco during thermal processing,ATR-FTIR spectroscopy was used to monitor the heating process of tobacco,and the effects of temperature on the structure and components of tobacco were studied by means of perturbation-correlation moving window analysis.The results showed that:1)The physical and chemical changes of tobacco during heating process mainly included:removal of adsorbed water molecules,volatilization of small molecular organic acids,dissociation of hydrogen bond structure in tobacco,melting of small molecular organic compounds and oxidation of hydroxyl groups.2)The transition temperature corresponding to the spectral intensity changes of O—H and C—H groups was 154℃and the transition interval was 148-162℃;while the transition temperature of spectral intensity changes of C=O groups was 156℃and the transition interval was 150-162℃,indicating the occurrence of violent physical or chemical processes,such as oxidation and removal of small molecules,in these temperature intervals.
