摘  要:分析稻谷在储藏期间混有不同数量的稻曲球对稻谷的萌发特性(发芽率、发芽势、根长)、食味品质(蛋白质含量、直链淀粉含量、脂肪酸含量和食味值)、加工品质(糙米率、精米率和整精米率)和过氧化物酶(POD)活性的影响。结果表明:稻谷在储藏期间混有稻曲球会降低稻谷的发芽势、发芽率、根长、整精米率、POD活性,增加脂肪酸含量,表明稻曲球会降低储藏期稻谷的活力和营养品质。The effects of different quantities of rice false smut balls mixed with rice during storage on the germination characteristics(germination rate,germination potential,root length),taste quality(protein content,amylose content,fatty acid content,and taste value),processing quality(brown rice rate,milled rice rate,and whole milled rice rate),and peroxidase(POD)activity of rice were analyzed.The results showed that the rice mixed with rice false smut balls during storage could reduce the germination potential,germination rate,root length,whole rice percentage,POD activity,and increase fatty acid content of rice.This indicated that rice false smut balls could reduce the vitality and nutritional quality of rice during storage.
