摘  要:目的:采用非靶标代谢组学的方法,探究中国油桃、蟠桃、黄桃、阳山水蜜桃与新沂水蜜桃代谢产物的差异性。方法:以250份成熟度相当的鲜桃为试材,运用高效液相色谱-四极杆串联飞行时间质谱法(UPLC-QTOFMS)对鲜桃果肉进行测定,通过主成分分析、代谢物差异性分析对不同品种鲜桃的代谢物进行研究。结果:共检测出74种代谢产物,主要为酚酸类、黄烷醇类、黄酮醇类、花色苷类、氨基酸类、糖苷类、环烯醚萜苷类、B族维生素等。PCA分析发现相比于其他4种鲜桃,阳山水蜜桃中7-羟基香豆素、乔松素、绿原酸、新绿原酸、表儿茶素、原花青素A_(2)、隐绿原酸、车前子苷、原花青素B_(2)含量较高,而维生素B_(2)、山奈酚、芦丁含量较低。根据OPLS-DA分析分别筛选出4种鲜桃与阳山水蜜桃的差异代谢物,油桃有原花青素B3等18种,蟠桃有原花青素B_(2)等12种、黄桃有原花青素A_(2)等18种、新沂水蜜桃有原花青素C_(1)等15种,可以作为区分阳山水蜜桃与其他4种鲜桃的潜在生物标志物。本研究发现5种鲜桃的差异代谢物主要为植物多酚类化合物,绿原酸与原花青素类代谢物在阳山水蜜桃中含量高,是关键差异代谢物。结论:非靶标代谢组学技术能有效地将5种鲜桃区分开,对鉴别鲜桃的品种具有可行性,可用于对鲜桃及鲜桃深加工品的辅助定性鉴别,可作为鉴别真假阳山水蜜桃的重要参考依据,对保护阳山水蜜桃特色产业的发展具有重要意义。Objective:To investigate the differences in metabolites of Chinese nectarine,peento,yellow peach,Yangshan honey peach and Xinyi honey peach by using non-target metabolomics.Methods:250 Fresh peaches of comparable maturity were used as test materials,and the fresh peach pulp was determined by high performance liquid chromatography-quadrupole tandem time-of-flight mass spectrometry(UPLC-QTOF-MS),and the metabolites of different varieties of fresh peaches were investigated by principal component analysis and metabolite variability analysis.Results:A total of 74 metabolites were detected,mainly phenolic acids,flavanols,flavonols,anthocyanins,amino acids,glycosides,iridoid glycosides,B vitamins,etc.PCA analysis revealed that compared with the other 4 fresh peaches,Yangshan honey peach had higher contents of 7-hydroxycoumarin,pinocembrin,chlorogenic acid,neochlorogenic acid,epicatechin,procyanidin A_(2),cryptochlorogenic acid,plantagoside,procyanidin B_(2),and lower levels of vitamin B_(2),kaempferol,rutin.Based on OPLS-DA analysis,4 fresh peaches were screened for differential metabolites with Yangshan honey peach respectively.Nectarine had 18 species of procyanidin B3 and other metabolites,peento had 12 species of procyanidin B_(2)and other metabolites,yellow peach had 18 species of procyanidin A_(2)and other metabolites,and Xinyi honey peach had 15 species of procyanidin C_(1)and other metabolites,which could be used as a potential biomarker to differentiate between Yangshan honey peach and the other 4 fresh peaches.In this study,the differential metabolites of the 5 fresh peaches were mainly plant polyphenolic compounds,and chlorogenic acid and procyanidin metabolites were high in Yangshan honey peach,which were the key differential metabolites.Conclusion:The non-target metabolomics technology can effectively distinguish the five fresh peaches,which is feasible for the identification of fresh peaches,and can be used to assist the qualitative identification of fresh peaches and deep-processed fresh peaches as an imp
