摘 要:在食品加工领域,监测酵母菌的含量对产品的产率和安全性有着极其重要的意义,常用的平板计数法等传统方法存在操作复杂、检测时间长、设备体积大等问题,因此有必要开发一种新型的酵母菌传感器以满足食品加工领域的复杂需求。提出了一种操作简单、非接触、低成本和小型化的微波超材料生物传感器,用于检测浓度范围为5×101~5×104 CFU/mL的酵母菌溶液。该微波传感器将微波超材料结构与叉指电容结构相结合,实现了设备的小型化,进一步增强了传感器表面的电场强度,提高了酵母菌检测的灵敏度。利用谐振频率和谐振幅值2个微波参数表征了不同浓度的酵母菌溶液,检测过程中谐振频率和谐振幅值的变化量分别为2.6 MHz和0.03 dB,实现了酵母菌溶液的传感。这项研究为食品加工领域酵母菌浓度的监测提供了新的方案,拓宽了微波生物传感的应用范围。In the field of food processing,monitoring the yeast content is extremely important for the yield and safety of the products,and the commonly used traditional methods such as plate counting method have the problems of complicated operation,long detection time,and large equipment size.Therefore,it is necessary to develop a new type of yeast sensor to meet the complex needs in the food processing field.A microwave metamaterial biosensor that is simple to operate,non-contact,low-cost and miniaturized is proposed for the detection of yeast solutions in the concentration range of 5×10^(1)~5×10^(4) CFU/mL.The microwave sensor combines a metamaterial structure with a fork-finger capacitance structure to achieve miniaturization of the device,which further enhances the strength of the electric field on the sensor surface and improves the sensitivity of yeast detection.Two microwave parameters,resonant frequency and harmonic amplitude value,are used to characterize different concentrations of yeast solutions,and the amounts of change in resonant frequency and harmonic amplitude value during the detection process are 2.6 MHz and 0.03 dB,respectively,achieving the sensing of yeast solutions.This study provides a new solution for monitoring yeast concentration in the food processing field and broadens the application of microwave biosensing.
