摘 要:虾青素呈鲜红色,属类胡萝卜素的氧化衍生物,可淬灭单线态氧、清除自由基、防止或阻断单线态氧和自由基引发的链式反应,是目前已知自然界中抗氧化性最强的可食用物质,在化妆品、水产、食品、营养保健甚至药品领域都有广阔的开发应用前景。本文从虾青素独特的化学分子结构、不同类型的旋光与顺反异构体角度入手,对虾青素的结构特征、组成和主要作用机理予以综述,阐述其生物活性和功效的异同,分析和展望在水产生物中的分布特征及在水产养殖中的应用,促进水产业健康发展。Astaxanthin,an oxygenated derivative of carotenoids,exhibits a bright red color.It has the ability to quench singlet oxygen,scavenge free radicals,and prevent or block chain reactions initiated by singlet oxygen and free radicals.Recognized as the most potent antioxidant among edible substances in nature,astaxanthin holds im-mense potential for development and application in various sectors,including cosmetics,aquaculture,food,nutri-tion,health care,and pharmaceuticals.This paper reviews the unique chemical molecular structure of astaxanthin and its different types of optical and geometric isomers and elaborates on the structural characteristics,composition,and primary functional mechanisms of astaxanthin.It also discusses the similarities and differences in its biological activities and effects.Furthermore,it analyzes and forecasts the distribution of astaxanthin in aquatic organisms and its applications in aquaculture,with the aim of promoting the healthy growth of the aquaculture industry.
