摘 要:食源性病原微生物已经成为全球性人类疾病和死亡的严重威胁之一,其检测对食品安全至关重要。传统方法由于耗时费力,需要研究应用更为快速、高效、灵敏、经济的检测新技术。在梳理以核酸和各种聚合酶链式反应为基础的食源性病原微生物最新检测技术的基础上,分析各项技术的原理、优点、局限性,探讨在铁路食品安全保障中的应用前景。Food-borne pathogens have become one of the severe threats to human illness and death world-wide.Detection of pathogenic microbes is thus essential for food safety.The conventional methods are time-consuming and laborious,and require research and application of advanced detection techniques that are quick,efficient,highly sensitive and economical.Recent nucleic acid-based and different polymerase chain reaction-based techniques that can be used for detection of viral and bacterial food-borne pathogens in food control laboratories are reviewed herein.Principles,superiority,limitations and application prospects in railway food safety guarantee of these methods are discussed.
