摘  要:明胶是一种纯天然、无毒无害、可降解的生物蛋白质资源,它具有价格低、来源丰富、环保安全等产业优点。随着科技的进步、表征手段的不断演进以及工业化生产的不断迭代,明胶在食品、医疗、日化等行业中扮演着愈来愈重要的角色。然而,尽管明胶具有较好的生物相容性,但其较差的水稳定性、较低的机械强度往往不利于其在实际场景中的应用。因此,我们一般用纤维材料来增强明胶的物理强度,并通过对明胶基纤维的物理、化学改性来满足实际应用中的各种需求。本文主要介绍了明胶基纤维材料的结构与性质、一般的制备方法以及近年来该类材料在生物医药、活性包装、水处理、食品添加剂、体外模拟、表面改性、储能材料等领域的研究应用,希望以此促进明胶科学的进一步发展。Gelatin is a kind of natural,non-toxic,harmless,and degradable biological protein.It has many industrial advantages such as low price,abundant sources,safety and environmentally friendly.With the advancement of science and technology,the continuous evolution of characterization methods and the continuous iteration of industrial production,gelatin plays an increasingly important role in the food,medical,daily chemical and other industries.However,despite the good biocompatibility of gelatin,its poor water stability and low mechanical strength are often not conducive to its application in practical scenarios.Therefore,we generally use fiber materials to enhance the physical strength of gelatin,and meet various needs in practical applications through physical and chemical modification of gelatin-based fibers.This paper mainly introduces the structure and properties of gelatin-based fiber materials,general preparation methods,and the application of it in the fields of biomedicine,active packaging,food improvement,sewage treatment,in vitro simulation,surface modification,etc.,which I hope can help to promote the further development of gelatin science.
