摘　　要：胶原蛋白是一种具有高生物可降解性,低免疫原性等优势的天然生物高分子材料,被广泛应用于食品、生物医用材料等领域。胶原蛋白水解物是胶原蛋白的长肽链断裂后的多肽混合物。本文从胶原蛋白及胶原蛋白水解物的介绍入手,图综述胶原蛋白水解物的分离纯化与分析鉴定方法,并总结了胶原蛋白及其水解物在食品、医疗、化妆品领域中的实际应用,对胶原蛋白及其水解物在今后商业产品开发中的潜在用途进行了系统地总结和讨论。Collagen is a natural biomolecial material with good biocompatibility,biodegradability and low immunogenicity.It is widely used in the fields of food and biomedical materials.A collagen peptide is a mixture of peptides after the long peptide chain of collagen has been cut.This paper collagen and its collagen hydrolysates,describes the separation,purification,analysis and identification methods of collagen peptides and the structural modification of collagen peptides,summarizes the practical applications of collagen peptides in the fields of food,medicine and cosmetics,and systematically summarizes and discusses the potential uses of collagen peptides in the development of commercial products in the future.
