摘 要:本方案旨在研究解决现有酒厂窖池窖泥老化问题,通过加入新窖泥测试配比,并植入己酸菌培养液来重新活化窖池窖泥,最终复壮并改善窖池窖泥质量,让窖泥中微生物菌落与繁衍环境达到最佳状态,从而达到提升原酒的风格和品质。本方案通过窖池窖泥复壮后,投粮发酵四轮后的原酒分析数值统计情况看,效果明显,达到预期目的,方案是可行有效的。This program aims to study and solve the aging problem of existing distillery pit mud by adding new pit mud to test the ratio,and implanting caproic acid bacteria culture solution to re-activate the pit mud,ultimately rejuvenating and improving the quality of pit mud,so that the microbial colony and breeding environment in the pit mud can reach the optimal state,thus improving the style and quality of the original wine.After the rejuvenation of the pit mud,the analysis of the original wine after four rounds of fermentation shows that the effect is obvious and the expected goal is achieved.The program is feasible and effective.
