摘　　要：该文从凯里市牛源供应严重不足、肉牛屠宰企业是代宰模式、屠宰监管力量不足3个方面介绍了凯里市肉牛屠宰管理的现状,针对工作中存在的问题,提出了规范牲畜交易市场管理、屠宰企业转型升级、加大对屠宰企业的督查力度优化肉牛屠宰管理等建议,以期优化提升凯里市肉牛屠宰管理工作。This paper introduces the current situation of beef cattle slaughtering management in Kaili city from three aspects,which were the serious shortage of cattle supply,the slaughter mode and the insufficient supervision of beef cattle slaughtering enterprises in Kaili city.In the light of the problems existing in the industry,this paper provided advice such as standardize the management of livestock trading market,transform and upgrade slaughtering enterprises and strengthen supervision over slaughtering enterprises,in order to optimize and improve the management of beef cattle slaughtering in Kaili city.
