摘  要:由于婴幼儿谷类辅助食品中含有淀粉类物质,导致其在前处理阶段的样液浑浊而影响亚硝酸盐的准确测定。本文通过优化酶解过程和方法学验证建立一种能准确测定婴幼儿谷类辅助食品亚硝酸盐含量的方法。结果表明,选择α-淀粉酶,在70℃酶解14 min,可有效解决样品滤液浑浊问题。亚硝酸盐含量在0~12.5μg线性关系良好,回归方程y=0.0142x-0.0001,相关系数r=0.9998,加标回收率为91.0%~98.2%。该方法操作简单,结果准确,可用于婴幼儿谷类辅助食品中亚硝酸盐含量的测定。Due to the presence of starchy substances in cereal supplements for infants and young children,the sample solution becomes turbid during the pre-treatment stage,which affects the accurate determination of nitrite.This article establishes an accurate method for determining the nitrite content in infant cereal supplements by optimizing the enzymatic hydrolysis process and verifying the methodology.The results showed that selecting alpha amylase for enzymatic hydrolysis at 70℃for 14 min can effectively solve the problem of turbidity in the sample filtrate.The nitrite had a good linear relationship between 0~12.5μg,the regression equation y=0.0142x-0.0001,the correlation coefficient r=0.9998,and the recovery rate was 91.0%~98.2%.This indicates that the method is simple to operate,accurate in results,and can be used for the determination of nitrite content in infant cereal supplements.
