摘  要:目的了解餐饮服务食品加工者不适当食品安全操作水平,并探讨与其关联的人口因素。方法以芜湖市132家餐馆和5所高校内学生集体食堂中年龄≥18岁、工作时间超过3个月的食品加工者为研究对象,采用自编问卷对其日常食品安全操作方式进行调查。用logistic回归分析食品安全操作与人口特征之间的相关性。结果共调查1072人,其中33.3%的人食品安全操作被认为“不适当”,其余76.7%的人被认为“适当”。男性(OR=1.876,P<0.001)及未参加过食品安全知识培训(OR=7.583,P<0.001)与不适当食品安全操作呈正相关。平均月收入3000~<5000元(OR=0.465,P<0.005)、平均月收入5000~<7000元(OR=0.366,P<0.001)、工作经验3~<5年(OR=0.533,P<0.05)及工作经验≥9年(OR=0.545,P<0.05)与不适当食品安全操作呈负相关。结论不适当食品安全操作在餐饮服务食品加工者中普遍存在。男性、低收入、工作经验不足及未接受食品安全知识培训的食品加工者更容易有不适当食品安全操作,应引起相关部门重视。Objective To assess the level of improper food safety practices among food handlers in catering services and explore the associated demographic factors.Methods A study was conducted involving food handlers aged≥18 years with more than three months of work experience from 132 restaurants and five university canteens in Wuhu city.A self-designed questionnaire was used to investigate their daily food safety practices.Logistic regression analysis was performed to examine the correlation between food safety practices and demographic characteristics.Results A total of 1072 individuals were surveyed,of which 33.3%were deemed to have“improper”food safety practices,while 76.7%were considered to have“appropriate”practices.Male gender(OR=1.876,P<0.001)and lack of food safety training(OR=7.583,P<0.001)were positively correlated with improper food safety practices.Conversely,an average monthly income of 3000 to<5000 yuan(OR=0.465,P<0.005),an average monthly income of 5000 to<7000 yuan(OR=0.366,P<0.001),3 to<5 years of work experience(OR=0.533,P<0.05),and≥9 years of work experience(OR=0.545,P<0.05)were negatively correlated with improper food safety practices.Conclusion Improper food safety practices are prevalent among food handlers in catering services.Male gender,low income,insufficient work experience,and lack of food safety training are associated with a higher likelihood of improper practices,which warrants attention from relevant authorities.
